Aged for about 18 months in 25 and 53 gallon, char 3 seasoned oak barrels. Bloody butcher corn, which is more earthy and rich, less sweet in flavor. A corn that is an heirloom heritage grain originating back in the Whiskey Rebellion days that they contract a local farm to grow for them. On the nose you get the aroma of dark chocolate and wood chips and that translates to earthy, oaky, toasted corn notes on the palate with a hint of maple and a nice malty finish. Awarded a Bronze Medal at the American Craft Spirits Association Competition, 2017, 2018, and 2019.
