Aged for 2 years in deeply charred new oak 30 gallon casks. Awarded a Gold Medal at the American Craft Spirits Association Competition, February 2017. The rebellious farmers of the Whiskey Rebellion were of Scotch Irish decent, so they imported malted, peated barley from Scotland to make a smoky and earthy, scotch like, bourbon. The Bloody Butcher Corn that they use to make the bourbon help make this more earthy and leathery to accompany the camp fire smoke from the peat.
